Preparation
- Prepare your workspace by cleaning and gathering all the ingredients.
- In a medium saucepan, combine the sugar, lemon juice, water, lemon zest, and salt. Stir to mix everything evenly.
- Place the saucepan over medium heat. Stir gently until the sugar has fully dissolved into the mixture.
- Once the sugar has dissolved, stir in the corn syrup for the chewy consistency.
- Increase the heat until the mixture comes to a boil. Allow it to boil for 5-10 minutes, stirring occasionally.
- Use a candy thermometer to ensure you reach the hard ball stage (about 250°F or 121°C).
- Drop a small spoonful of the mixture into a glass of cold water. If it forms into a hard ball, you’re ready for the next step.
- Remove the saucepan from heat and carefully pour the hot mixture onto a greased parchment-lined baking dish.
- Allow the mixture to cool slightly, then cut into small bite-sized drops.
- Once fully cooled, dust with powdered sugar to prevent sticking.

Notes
Store in an airtight container at room temperature for up to two weeks. For longer storage, refrigerate and bring to room temperature before enjoying.
