Ingredients

For the Chicken
  • 1 pound chicken breasts, cut into bite-sized pieces
  • 2 cloves garlic, minced
  • 1 tablespoon ginger, minced
  • 2 tablespoons vegetable oil, for frying You can use canola or peanut oil.
  • Salt and pepper to taste
For the Marinade and Further Flavoring
  • ¼ cup soy sauce (or tamari for gluten-free)
  • ¼ cup sweet chili sauce
  • 1 tablespoon honey or maple syrup For added sweetness.
  • ¼ cup chopped green onions For garnish.

Method

Preparation
  1. In a large bowl, combine the soy sauce, sweet chili sauce, minced garlic, ginger, and honey. Add the chicken pieces, ensuring they are fully coated. Let it marinate for 15 minutes.
Cooking
  1. In a large skillet or frying pan, heat the vegetable oil over medium-high heat until shimmering.
  2. Carefully add the marinated chicken pieces to the pan in batches to avoid overcrowding. Fry the chicken for about 5-7 minutes until golden and cooked through.
  3. Once cooked, pour any remaining marinade into the pan to coat the chicken further. Cook for an additional 2-3 minutes on low heat until the sauce thickens slightly.
Serving
  1. Remove from heat, sprinkle with chopped green onions, and serve hot with jasmine rice or your favorite side dishes.

Notes

For variations, you can substitute sweet chili sauce with a quick homemade version using equal parts ketchup and sugar. Enjoy the dish with fresh toppings like cilantro or chopped peanuts for an elevated flavor experience.
