Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, cream together softened butter and sugar until light and fluffy, about 3-5 minutes.
- Beat in the egg and vanilla extract until well combined.
- In a separate bowl, whisk together flour, baking powder, and salt. Slowly add this to the wet ingredients, stirring until just combined.
- Gently fold in the chopped sweet red cherries.
- Drop tablespoonfuls of dough onto a prepared baking sheet lined with parchment paper, leaving space for spreading.
Baking
- Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
- Allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.
Notes
