  • 1 teaspoon baking powder Leavening agent.
  • 1/2 teaspoon salt Enhances flavor.
  • 1 cup sweet red cherries, pitted and chopped Fresh sweet red cherries for best flavor.
  • 1 teaspoon vanilla extract Pure vanilla for rich flavor.

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, cream together softened butter and sugar until light and fluffy, about 3-5 minutes.
  3. Beat in the egg and vanilla extract until well combined.
  4. In a separate bowl, whisk together flour, baking powder, and salt. Slowly add this to the wet ingredients, stirring until just combined.
  5. Gently fold in the chopped sweet red cherries.
  6. Drop tablespoonfuls of dough onto a prepared baking sheet lined with parchment paper, leaving space for spreading.
Baking
  1. Bake in the preheated oven for 12-15 minutes or until the edges are golden brown.
  2. Allow the cookies to cool on the baking sheet for a couple of minutes before transferring them to a wire rack to cool completely.

Notes

For an elevated treat, consider topping these cookies with powdered sugar or a drizzle of melted chocolate. To keep cookies fresh, store in an airtight container at room temperature for up to a week or freeze for up to three months.
