Preparation
- Preheat the oven to 400°F (200°C).
- Wash and peel the sweet potatoes. Slice them into ¼-inch thick rounds.
- In a large bowl, toss the sweet potato slices with olive oil, salt, and pepper.
Baking
- Lay the sweet potato rounds on a baking sheet lined with parchment paper in a single layer. Bake for 20 minutes, flipping them halfway through.
- Place a slice of brie cheese on top of each round and return to the oven for another 5 minutes.
- Spread cranberry sauce over each round and sprinkle chopped pecans on top.
- Serve warm while the brie is still gooey.
Notes
For substitutions, consider using your favorite nuts or cheese like goat cheese. Pay attention to baking times as ovens can vary. Store in an airtight container in the refrigerator for up to 3 days. Reheat in the oven at 350°F (175°C) for about 10 minutes.
