Preparation
- Preheat your oven to 400°F (200°C).
- Wash and peel the sweet potatoes. Slice them into rounds about ½ inch thick.
- In a large mixing bowl, toss the sweet potato rounds with olive oil, salt, and pepper to ensure they are evenly coated.
- Place the sweet potato rounds in a single layer on a parchment-lined baking sheet.
Cooking
- Roast the sweet potato rounds in the oven for about 20 minutes or until tender and slightly caramelized, flipping them halfway through.
- Once out of the oven, sprinkle the crumbled blue cheese and dried cranberries over the sweet potato rounds.
- Return to the oven for an additional 5 minutes to allow the cheese to melt slightly.
- Remove from the oven, let cool for a couple of minutes, and serve while warm.
Notes
You can customize toppings with feta or goat cheese, and avoid overcrowding the baking sheet while roasting.
