Ingredients
  

For the sweet potato rounds
  • 2 large sweet potatoes Washed and peeled
  • 2 tablespoons olive oil For coating
  • Salt to taste Salt
  • Pepper to taste Pepper
For the toppings
  • 6 ounces blue cheese, crumbled
  • 1 cup dried cranberries

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. Wash and peel the sweet potatoes. Slice them into rounds about ½ inch thick.
  3. In a large mixing bowl, toss the sweet potato rounds with olive oil, salt, and pepper to ensure they are evenly coated.
  4. Place the sweet potato rounds in a single layer on a parchment-lined baking sheet.
Cooking
  1. Roast the sweet potato rounds in the oven for about 20 minutes or until tender and slightly caramelized, flipping them halfway through.
  2. Once out of the oven, sprinkle the crumbled blue cheese and dried cranberries over the sweet potato rounds.
  3. Return to the oven for an additional 5 minutes to allow the cheese to melt slightly.
  4. Remove from the oven, let cool for a couple of minutes, and serve while warm.

Notes

You can customize toppings with feta or goat cheese, and avoid overcrowding the baking sheet while roasting.
