Ingredients
  

For the Crust
  • 2 medium sweet potatoes About 2 cups when mashed
  • 1 cup pizza dough Store-bought or homemade
  • 2 tablespoons olive oil For flavor and moisture
For the Toppings
  • 1 cup shredded cheese Mozzarella or any Halal-friendly cheese
  • 0.5 cup sliced bell peppers Choose your favorite color
  • 0.5 cup chopped spinach
  • 0.5 cup onions, thinly sliced
  • 1 teaspoon Italian seasoning For added flavor

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. Wash and peel the sweet potatoes, then chop them into small chunks.
  3. Boil the sweet potatoes in a pot of water for about 15-20 minutes, or until they're fork-tender.
Assembling the Pizza
  1. Drain the sweet potatoes and mash them in a bowl. Add a pinch of salt and olive oil for added flavor.
  2. On a floured surface, roll out the pizza dough to your desired thickness and transfer to a baking sheet lined with parchment paper.
  3. Spread the mashed sweet potatoes evenly over the pizza dough.
  4. Sprinkle the shredded cheese over the sweet potato layer, then add your selected vegetables and seasonings.
Baking and Serving
  1. Place your Sweet Potato Pizza in the oven and bake for about 15-20 minutes, or until the crust is golden and the cheese is bubbly.
  2. Once out of the oven, let it cool for a few minutes. Slice into pieces and serve warm.

Notes

If you have leftovers, wrap slices tightly in plastic wrap or place in an airtight container. Store in the refrigerator for up to 3 days. For reheating, preheat your oven to 350°F (175°C) and bake slices for about 10 minutes.
