Preparation
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- Cook the sweet potatoes until tender, then let them cool and mash them well.
- In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
- Beat in the egg and vanilla extract into the butter and sugar mixture.
- Stir in the mashed sweet potatoes until well combined.
- In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Cheesecake Filling & Baking
- In another bowl, beat the cream cheese until smooth.
- Scoop out a portion of the cookie dough, flatten it slightly, and place a dollop of cream cheese mixture in the center. Fold the dough over to seal and roll into a ball.
- Place the cookie balls on the prepared baking sheet and bake for 15-20 minutes until golden around the edges.
- Cool for a few minutes on the baking sheet before transferring to a wire rack.
Notes
Top with maple syrup, cinnamon, or crushed nuts for added flavor. For best results, chill the dough for 30 minutes before baking.
