  • 1 cup mashed sweet potatoes (cooked and cooled) Quality sweet potatoes enhance the flavor
  • 1/2 cup cream cheese (softened) Use plain cream cheese or add vanilla for extra flavor
  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar
  • 1/4 cup brown sugar
  • 1/2 cup butter (softened)
  • 1 teaspoon baking soda
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon salt
  • 1 large egg

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. Cook the sweet potatoes until tender, then let them cool and mash them well.
  3. In a mixing bowl, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy.
  4. Beat in the egg and vanilla extract into the butter and sugar mixture.
  5. Stir in the mashed sweet potatoes until well combined.
  6. In a separate bowl, whisk together flour, baking soda, cinnamon, nutmeg, and salt.
  7. Gradually add the dry ingredients to the wet mixture, stirring until just combined.
Cheesecake Filling & Baking
  1. In another bowl, beat the cream cheese until smooth.
  2. Scoop out a portion of the cookie dough, flatten it slightly, and place a dollop of cream cheese mixture in the center. Fold the dough over to seal and roll into a ball.
  3. Place the cookie balls on the prepared baking sheet and bake for 15-20 minutes until golden around the edges.
  4. Cool for a few minutes on the baking sheet before transferring to a wire rack.

Notes

Top with maple syrup, cinnamon, or crushed nuts for added flavor. For best results, chill the dough for 30 minutes before baking.
