  • 2 medium medium-sized sweet potatoes, roasted and mashed Roast at 400°F (200°C)
  • 1 can (15 oz) black beans, drained and rinsed
  • 1/2 cup breadcrumbs Can be gluten-free
  • 1/2 teaspoon cumin
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • to taste salt and black pepper
  • as needed olive oil for frying

Method
 

Preparation
  1. Roast your sweet potatoes in a preheated oven at 400°F (200°C) for about 45 minutes, or until tender. Once cooled, peel and mash them in a large mixing bowl.
  2. Add the rinsed and drained black beans to the bowl with sweet potatoes. Using a fork or potato masher, mash the black beans slightly while leaving some whole for texture.
  3. Mix in the breadcrumbs, cumin, smoked paprika, garlic powder, and season with salt and black pepper.
  4. Using your hands, form the mixture into burger-sized patties. If the mixture feels too wet, add a bit more breadcrumbs until the desired consistency is reached.
  5. Heat olive oil in a skillet over medium heat. Cook the patties for about 4-5 minutes on each side, or until they’re golden brown and crispy.
  6. Serve your burgers on your favorite buns or even lettuce wraps! Top them with avocado, salsa, or any other toppings you enjoy.

Notes

For variations, swap black beans with pinto or kidney beans. Add cayenne pepper for a spicy kick. Avoid overcooking to keep patties moisture.
