  • 2 medium sweet potatoes, diced Ensure they are cut into bite-sized pieces for even cooking.
  • 1 lb Halal sausage (chicken or turkey) Can substitute with spicy Halal sausage for a twist or plant-based sausage for a vegetarian option.
  • 1 medium onion, chopped
  • 4 cloves garlic, minced Be careful not to burn while sautéing.
  • 4 cups chicken or vegetable broth
  • 2 tablespoons olive oil
  • to taste salt and pepper
  • 1 teaspoon dried thyme
  • 1 leaf bay leaf Remove before serving.

Preparation
  1. In a large pot, heat olive oil over medium heat. Add the chopped onion and sauté until it becomes translucent (about 4-5 minutes). Stir in the minced garlic for another minute until fragrant.
  2. Add the Halal sausage to the pot. Break it apart with a wooden spoon and cook until browned (around 5-7 minutes).
  3. Toss in the diced sweet potatoes, thyme, and bay leaf. Stir everything together, letting the sweet potatoes soak up the savory flavors.
  4. Pour in the chicken or vegetable broth, then season with salt and pepper. Bring the mixture to a gentle boil.
  5. Reduce heat to low, cover the pot, and let it simmer for 25-30 minutes until the sweet potatoes are tender enough to mash with a fork.
  6. Remove the bay leaf. Mash some sweet potatoes for a creamier texture or leave it chunky for a heartier feel.
  7. Ladle into bowls and enjoy the rich aroma and delightful taste of your homemade soup!

Notes

Can be stored in an airtight container in the refrigerator for up to 4 days or frozen for up to 3 months. Reheat on the stovetop over medium heat, adding broth or water if it becomes too thick.
