Method
 

Preparation
  1. Start by washing your cherries thoroughly and, if they are not pitted, pit them for convenience.
Make the Glaze
  1. In a medium-sized pot, combine the granulated sugar and water. Stir over medium heat until the sugar dissolves completely.
  2. Bring the mixture to a gentle boil and add the lemon juice.
Coat the Cherries
  1. Once the glaze is boiling, add the pitted cherries carefully. Stir gently to coat each cherry.
  2. Allow them to simmer for about 5 minutes, stirring occasionally, until they are just tender.
Cool and Crystallize
  1. Remove the pot from heat and let the cherries cool in the pot for about 10 minutes. The glaze will thicken while cooling.
Serve
  1. Toss the cherries in optional toppings like crushed nuts, shredded coconut, or powdered sugar before serving.
  2. Present on a platter and enjoy!

Notes

Store leftovers in an airtight container in the refrigerator for 3-5 days. For longer storage, freeze the cherries, noting that the texture may change upon thawing. Reheat in a small saucepan on low heat.
