  • 1 cup fresh pineapple chunks (diced) Make sure your pineapple is ripe for the best sweetness.
  • 1/2 cup sugar Feel free to adjust based on personal sweetness preferences.
  • 1/4 cup pineapple juice Freshly squeezed if you can!
  • 1/4 cup rice vinegar
  • 1 tablespoon soy sauce Ensure it’s Halal-friendly.
  • 1 tablespoon chili flakes Adjust to taste for heat.
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon grated ginger Optional for an extra zing.

Method
 

Preparation
  1. Start by cutting your pineapple into small chunks and set them aside.
  2. In a medium saucepan, combine the sugar, pineapple juice, rice vinegar, soy sauce, chili flakes, garlic powder, and grated ginger (if using). Mix well.
  3. Place the saucepan over medium heat and stir until the sugar completely dissolves (about 3-5 minutes).
  4. Once the mixture is boiling, add in the pineapple chunks and continue to cook for an additional 5-7 minutes, stirring occasionally.
  5. Lower the heat and let it simmer for another 5 minutes until the sauce thickens to your desired consistency.
  6. Remove the saucepan from heat and let the sauce cool before using it.

Notes

If you have any leftover sauce, store it in an airtight container in the refrigerator for up to one week or freeze for up to three months. Reheat over low heat in a saucepan.
