Ingredients
  

Cherry Filling
  • 4 cups fresh or frozen cherries, pitted Fresh cherries are preferred; if using frozen, drain excess liquid.
  • 1 cup granulated sugar Divided into two parts.
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
Cobbler Batter
  • 1 cup all-purpose flour
  • 1 cup milk
  • 1/2 cup melted butter
  • 1 teaspoon baking powder
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. If using fresh cherries, wash and pit them. If using frozen, let them thaw slightly and drain excess liquid.
  3. Combine cherries with 1/2 cup sugar, lemon juice, and vanilla extract in a mixing bowl. Toss and set aside.
  4. In another bowl, whisk together flour, the remaining sugar, baking powder, and salt. Add in milk and melted butter to create a smooth batter.
Baking
  1. Pour the cherry mixture into a greased baking dish.
  2. Gently pour the batter over the cherries. It doesn’t need to cover them completely.
  3. Bake in the preheated oven for 30-40 minutes or until golden brown and bubbly.
Serving
  1. Let the cobbler cool for a few minutes before serving.
  2. Serve warm, optionally with vanilla ice cream or whipped cream.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in the microwave or oven for best texture.
