  • 2 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/4 cup granulated sugar
Wet Ingredients
  • 1/2 cup unsalted butter, cold and cubed Ensure butter is very cold for flaky layers.
  • 3/4 cup buttermilk
  • Zest of 1 lemon
Add-ins
  • 3/4 cup fresh blueberries Seasonal blueberries yield the best results.
Lemon Glaze
  • 1 cup powdered sugar
  • 2 tablespoons lemon juice

Method
 

Preparation
  1. Preheat your oven to 425°F (220°C).
  2. In a large bowl, whisk together the flour, baking powder, salt, and granulated sugar until well combined.
  3. Add the cold, cubed butter into the dry mixture. Use a pastry cutter or two forks to combine, creating a crumbly texture with pea-sized butter pieces.
  4. Gently fold in the fresh blueberries, ensuring they don’t burst.
  5. In a separate bowl, whisk together the buttermilk and lemon zest. Pour this mixture into the dry ingredients, combining until just mixed.
  6. Turn your dough onto a floured surface and pat it into a rectangle about 1-inch thick. Cut into 2-inch rounds using a biscuit cutter.
Baking
  1. Place the biscuits on a baking sheet lined with parchment paper and bake for 15-20 minutes or until golden brown.
Glazing
  1. While the biscuits are baking, whisk together the powdered sugar and lemon juice until smooth.
  2. Once your biscuits are out of the oven and have cooled slightly, drizzle the lemon glaze over the top.

Notes

Store any unused biscuits in an airtight container in the fridge for up to 3 days or freeze for up to 2 months. To reheat, bake at 350°F (175°C) for about 10 minutes.
