Ingredients

Main Ingredients
  • 2 cups raw cashews
  • 2 tablespoons olive oil
  • 2 tablespoons brown sugar
  • 1 tablespoon honey
  • 1 teaspoon cayenne pepper
  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Method

Preparation
  1. Preheat your oven to 350°F (175°C) and allow it to preheat while you prepare your cashews.
  2. In a medium bowl, combine the raw cashews with olive oil, ensuring each nut is well-coated.
  3. In a separate bowl, mix together the brown sugar, honey, cayenne pepper, chili powder, salt, and black pepper until well blended.
  4. Pour the flavor mixture over the coated cashews in the first bowl and stir well until the cashews are evenly coated.
  5. Line a baking sheet with parchment paper and spread the cashews in a single layer to ensure they roast evenly.
  6. Place the baking sheet in the preheated oven and roast for 15-20 minutes, stirring halfway through to prevent burning.
  7. Once roasted and fragrant, remove the cashews from the oven and let them cool before serving.

Notes

Store the cashews in an airtight container at room temperature for up to two weeks. They can also be frozen for up to three months. No reheating is needed; they'll retain their delightful crunch!
