Ingredients

Wet Ingredients
  • 1 can (15 oz) pure pumpkin purée
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1/2 cup vegetable oil
  • 4 large eggs
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 tsp baking soda
  • 1/2 tsp baking powder
  • 1/2 tsp salt
  • 2 tsp pumpkin pie spice (or a mix of cinnamon, nutmeg, and ginger)
Optional Ingredients
  • 1/2 cup chopped walnuts or pecans (optional)

Method

Preparation
  1. Preheat your oven to 350°F (175°C). Grease a 9×5-inch loaf pan or line it with parchment paper.
  2. In a large mixing bowl, blend together the pumpkin purée, granulated sugar, brown sugar, and vegetable oil. Then, crack in the eggs one at a time, whisking until smooth.
  3. In another bowl, whisk together the flour, baking soda, baking powder, salt, and pumpkin pie spice until well combined.
  4. Gradually add the dry ingredients to the wet mixture, stirring gently until just combined. Be careful not to overmix. Fold in the nuts if using.
Baking
  1. Pour the batter into your prepared loaf pan, smoothing the top with a spatula.
  2. Place the pan in the preheated oven and bake for 55-65 minutes, or until a toothpick inserted in the center comes out clean.
Cooling
  1. Once done, remove the bread from the oven and let it cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  2. Slice and enjoy!

Notes

Don’t overmix the batter to avoid a dense texture. Use fresh spices for best flavor. Consider substituting regular flour with whole wheat flour for a healthier option. Check for doneness around the 50-minute mark.
