  • 4 cups bread cubes (preferably a mix of white and whole wheat) Use a mix for better flavor
  • 1 cup vegetable broth
  • 1 small onion, finely chopped
  • 2 stalks celery, diced
  • ¼ cup fresh parsley, chopped
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp dried sage
  • 1 tsp dried thyme
  • 1 tsp salt
  • ½ tsp black pepper
  • 2 large eggs, beaten
  • ½ cup shredded cheese (optional) For an extra cheesy flavor

Preparation
  1. Preheat your oven to 375°F (190°C).
  2. In a skillet, heat a small amount of oil over medium heat. Add the chopped onion and diced celery. Sauté until softened, about 5-7 minutes.
  3. In a large bowl, mix the bread cubes, sautéed vegetables, parsley, garlic powder, onion powder, sage, thyme, salt, and pepper. Toss well to combine.
  4. Pour in the vegetable broth and beaten eggs. If using cheese, fold it in last. Mix until the bread cubes are moistened but not mushy.
  5. With your hands, scoop out portions of the mixture and roll them into balls, about the size of a golf ball.
  6. Place the stuffing balls on a greased baking sheet and bake for 15-20 minutes, or until golden brown and crisp.
  7. Allow them to cool slightly before serving. Enjoy as a side dish or a fun appetizer.
