- In a large pot, cook the ground beef over medium heat until it’s brown. Use a spatula to break it up as it cooks. Once browned, drain any excess grease.
- Stir in the chopped onion, green bell pepper, and minced garlic. Sauté for about 5 minutes, until the vegetables soften.
- Pour in the beef broth and diced tomatoes with their juice. Stir in the uncooked rice, Italian seasoning, salt, and pepper. Bring the mixture to a boil.
- Reduce the heat to low, cover the pot, and let it simmer for about 30 minutes, or until the rice is tender. Stir occasionally to ensure even cooking.
- Once done, taste and adjust seasoning if necessary. Ladle the soup into bowls and add your favorite toppings like shredded cheese or fresh herbs.
Notes
To store leftovers, let the soup cool completely before transferring it to an airtight container. In the refrigerator, it should last up to 4 days. If you want to keep it longer, consider freezing it for up to 3 months. When reheating, add a splash of broth to maintain consistency.
