  1. Using a sharp knife, slice each Medjool date down the center and carefully remove the pit.
  2. In a mixing bowl, combine the softened cream cheese and chopped walnuts. Mix vigorously until it’s nice and creamy. If you’re feeling adventurous, add a tiny pinch of sea salt.
  3. Using a small spoon or knife, fill each date with the cream cheese mixture. Drizzle honey over the dates if desired.
  4. Arrange the stuffed dates on a serving platter and drizzle a light honey finish if used.
  5. Serve the stuffed dates immediately or refrigerate them until it’s time to impress your guests.

Notes

These stuffed dates are best enjoyed fresh but can be stored in the refrigerator for up to 4 days in an airtight container. For freezing, wrap well to avoid freezer burn, keeping for about 2-3 months. Thaw in the fridge overnight and warm in the microwave if desired.
