  • 4 cups fresh or frozen corn kernels
  • 2 cups shredded mozzarella cheese
  • 1 cup crumbled feta cheese (Halal)
  • 1/2 cup mayonnaise
  • 1 tablespoon lime juice
  • 1 tablespoon chili powder
  • 1/2 teaspoon garlic powder
  • 1/4 cup chopped cilantro
  • to taste Salt and pepper

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. If using fresh corn, cut the kernels off the cob. For frozen corn, thaw and drain any excess water.
  3. In a large mixing bowl, combine the corn, mozzarella cheese, feta cheese, mayonnaise, lime juice, chili powder, garlic powder, cilantro, salt, and pepper. Mix until well combined.
  4. Pour the mixture into a greased baking dish, spreading it evenly.
  5. Place in the preheated oven and bake for about 20 minutes or until the cheese is bubbly and golden brown.
  6. Remove from the oven, let it cool slightly, and serve warm. Garnish with additional cilantro or a sprinkle of chili powder if desired.

Notes

Feel free to mix cheeses to your liking, and ensure not to crowd the baking dish for even cooking. Store leftovers in an airtight container in the refrigerator for up to 3 days, or freeze the uncooked mixture for up to 2 months.
