Cookie Base
  • 1 box 15.25 oz strawberry cake mix
  • 2 large eggs
  • 1/3 cup vegetable oil
Mix-ins
  • 1 cup white chocolate chips
  • 1/2 cup chopped fresh strawberries Make sure they are hulled and diced.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper to prevent sticking.
  2. In a large mixing bowl, combine the strawberry cake mix, eggs, and vegetable oil. Stir until everything is well incorporated and you have a smooth batter.
  3. Gently fold in the white chocolate chips and diced strawberries until evenly dispersed throughout the batter.
  4. Use a cookie scoop to portion the dough onto your prepared baking sheet, leaving about 2 inches of space between each cookie.
Baking
  1. Place the baking sheet in the preheated oven and bake for 10-12 minutes, or until the edges are set but the centers are still soft.
  2. Remove the cookies from the oven and let them sit on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.

Notes

Store cookies in an airtight container at room temperature for about 3 days or freeze for up to 2 months. Reheat in the oven at 350°F for about 5 minutes when ready to enjoy.
