Preparation
- Preheat your oven to 350°F (175°C).
- Grease a 9x13 inch baking dish or line it with parchment paper.
- In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
- Mix in the eggs one at a time, incorporating each fully before adding the next. Stir in vanilla extract.
- In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
- Gently fold in the chopped strawberries.
- Spread the batter evenly into your prepared baking dish.
Baking
- Place the dish in the preheated oven and bake for about 25-30 minutes or until edges are lightly golden and a toothpick inserted into the center comes out clean.
- Once done, remove from the oven and let cool in the pan for at least 10 minutes. Dust with powdered sugar if desired.
- Slice into squares and serve.
Notes
Substitutions: You can swap strawberries for other fruits like raspberries or blueberries. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
