Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. Grease a 9x13 inch baking dish or line it with parchment paper.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 2-3 minutes.
  4. Mix in the eggs one at a time, incorporating each fully before adding the next. Stir in vanilla extract.
  5. In a separate bowl, whisk together the flour, baking powder, and salt. Gradually mix the dry ingredients into the wet ingredients until just combined.
  6. Gently fold in the chopped strawberries.
  7. Spread the batter evenly into your prepared baking dish.
Baking
  1. Place the dish in the preheated oven and bake for about 25-30 minutes or until edges are lightly golden and a toothpick inserted into the center comes out clean.
  2. Once done, remove from the oven and let cool in the pan for at least 10 minutes. Dust with powdered sugar if desired.
  3. Slice into squares and serve.

Notes

Substitutions: You can swap strawberries for other fruits like raspberries or blueberries. Store in an airtight container in the refrigerator for up to 5 days or freeze for up to 2 months.
