Preparation
- In a bowl, mix the softened cream cheese, sliced strawberries, and 2 tablespoons of sugar until well combined. Set aside.
- In another bowl, whisk together the eggs, milk, vanilla extract, and remaining sugar. Add in the ground cinnamon and mix until smooth.
Assembly
- Take one slice of bread and spread a generous amount of the cream cheese and strawberry mixture on one side. Top it with another slice to create a sandwich. Repeat for the remaining slices.
- Dip each sandwich into the egg mixture, ensuring both sides are well coated. Then, roll the sides in crushed cereal for added crunch.
Cooking
- In a skillet over medium heat, melt butter. Cook each stuffed sandwich for about 3-4 minutes on each side or until golden brown and crispy.
- Once cooked, serve with additional fresh strawberries, a dusting of powdered sugar, or a drizzle of syrup.
Notes
For ultimate fluffiness, choose thick slices of bread like brioche or challah. You can prepare the filling a day in advance and simply assemble and cook the next morning. Variations with blueberries or bananas also make for marvelous fillings. Cook on medium heat for the best crust.
