  • 4 oz cream cheese, softened
  • 1 cup fresh strawberries, sliced
  • 2 tablespoons granulated sugar for mixing with the filling
For the French Toast
  • 4 slices thick bread (like brioche or Texas toast)
  • 2 large eggs
  • ½ cup milk (or your preferred milk alternative)
  • 1 tsp vanilla extract
  • 1 tsp ground cinnamon
  • ¼ cup granulated sugar for the egg mixture
  • 1 cup crushed cereal (like cornflakes or graham crackers) for coating

Method
 

Preparation
  1. In a bowl, mix the softened cream cheese, sliced strawberries, and 2 tablespoons of sugar until well combined. Set aside.
  2. In another bowl, whisk together the eggs, milk, vanilla extract, and remaining sugar. Add in the ground cinnamon and mix until smooth.
Assembly
  1. Take one slice of bread and spread a generous amount of the cream cheese and strawberry mixture on one side. Top it with another slice to create a sandwich. Repeat for the remaining slices.
  2. Dip each sandwich into the egg mixture, ensuring both sides are well coated. Then, roll the sides in crushed cereal for added crunch.
Cooking
  1. In a skillet over medium heat, melt butter. Cook each stuffed sandwich for about 3-4 minutes on each side or until golden brown and crispy.
  2. Once cooked, serve with additional fresh strawberries, a dusting of powdered sugar, or a drizzle of syrup.

Notes

For ultimate fluffiness, choose thick slices of bread like brioche or challah. You can prepare the filling a day in advance and simply assemble and cook the next morning. Variations with blueberries or bananas also make for marvelous fillings. Cook on medium heat for the best crust.
