  • 2 cups fresh spinach Thoroughly rinsed
  • 1 cup fresh strawberries, sliced Use ripe strawberries for sweetness
  • 1 cup blueberries
  • 1/2 cup pecans, chopped Chop if not pre-chopped
  • 1/2 cup feta cheese, crumbled Can substitute with vegan feta
Dressing Ingredients
  • 1/4 cup lemon juice Freshly squeezed is preferred
  • 2 tablespoons honey
  • 1/4 cup olive oil
  • Salt and pepper to taste

Method
 

Preparation
  1. Rinse the spinach thoroughly under cold water, then gently dry with a clean kitchen towel or salad spinner. Slice the strawberries and set aside. Chop the pecans if they aren't pre-chopped.
Prepare the Dressing
  1. In a mixing bowl, combine the lemon juice, honey, and olive oil. Season with salt and pepper to taste. Whisk until the texture is smooth and the dressing is well blended.
Assemble the Salad
  1. In a large mixing bowl, combine the spinach, sliced strawberries, blueberries, chopped pecans, and crumbled feta cheese.
  2. Drizzle the dressing on top and toss everything gently, making sure all the ingredients are evenly coated.
Serve
  1. Transfer the salad to a serving dish or divide into individual bowls. Enjoy immediately for a fresh taste!

Notes

For a nut-free version, replace pecans with sunflower seeds. If making ahead, keep the dressing separate until you're ready to serve to maintain the salad's freshness.
