Method
Cooking the Sago
- Start by bringing the 2 cups of water to a boil in a medium saucepan.
- Once boiling, add the 1 cup of sago pearls, reducing the heat to low.
- Cook for about 15-20 minutes, stirring occasionally, until the pearls are translucent.
Preparing the Mixture
- Once cooked, remove the pot from heat and drain the sago pearls in a fine mesh strainer.
- Rinse them under cold water to stop the cooking process and remove excess starch.
- In the same saucepan, combine the 1/2 cup sugar, 1 cup of coconut milk, and 1 teaspoon of vanilla extract.
- Stir over low heat until the sugar has fully dissolved but do not bring it to a boil.
- Add the chopped strawberries and rinsed sago to the coconut mixture, stirring gently to combine.
Chilling and Serving
- Transfer the mixture into serving bowls or a large dish.
- Allow it to cool at room temperature, then cover and refrigerate for at least 2 hours to let the flavors meld.
- Once chilled, garnish with fresh strawberries before serving.
Notes
Store covered in the fridge for up to 3 days. Remove fresh strawberries before storing to maintain texture. This dessert is best served cold.
