Ingredients
  

Base and Topping
  • 2 cups rolled oats
  • 1 cup all-purpose flour
  • 1/2 cup brown sugar can be adjusted to taste
  • 1/2 cup granulated sugar substitute with coconut sugar if desired
  • 1/2 teaspoon salt
  • 1/2 teaspoon baking powder
  • 1 cup unsalted butter melted
Filling
  • 1 cup strawberry jam
  • 1/2 cup fresh strawberries chopped, optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.
  2. In a large bowl, mix the rolled oats, flour, brown sugar, granulated sugar, salt, and baking powder until fully combined.
  3. Pour in the melted butter, mixing until everything is evenly coated to achieve a crumbly texture.
  4. Set aside about 1/3 of the mixture to use as a topping. Press the remaining mixture into the bottom of the prepared baking pan.
  5. Spread the strawberry jam evenly over the base layer. Optionally, sprinkle chopped strawberries on top.
  6. Crumble the reserved oat mixture over the jam layer to create a topping.
Baking
  1. Bake in the preheated oven for 25-30 minutes, until the edges are golden brown and the center is set.
  2. Once baked, allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack.
  3. Once completely cool, cut into squares and enjoy.

Notes

Store in an airtight container at room temperature for up to 5 days or refrigerate for up to a week. Reheat in the microwave for 10-15 seconds or in the oven at 350°F for 5-7 minutes to regain crispiness.
