Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x9-inch baking pan.
- In a large bowl, mix the rolled oats, flour, brown sugar, granulated sugar, salt, and baking powder until fully combined.
- Pour in the melted butter, mixing until everything is evenly coated to achieve a crumbly texture.
- Set aside about 1/3 of the mixture to use as a topping. Press the remaining mixture into the bottom of the prepared baking pan.
- Spread the strawberry jam evenly over the base layer. Optionally, sprinkle chopped strawberries on top.
- Crumble the reserved oat mixture over the jam layer to create a topping.
Baking
- Bake in the preheated oven for 25-30 minutes, until the edges are golden brown and the center is set.
- Once baked, allow the bars to cool in the pan for about 10 minutes before transferring them to a wire rack.
- Once completely cool, cut into squares and enjoy.
Notes
Store in an airtight container at room temperature for up to 5 days or refrigerate for up to a week. Reheat in the microwave for 10-15 seconds or in the oven at 350°F for 5-7 minutes to regain crispiness.
