  • 2 cups fresh strawberries, hulled
  • 1/2 cup lemon juice (freshly squeezed)
  • 1/2 cup sugar (adjust to taste) You can substitute with honey or agave syrup.
  • 2 cups water

Method
 

Preparation
  1. Start by placing the hulled strawberries in a blender. Blend until smooth and creamy, which should take about 1-2 minutes.
  2. In a large mixing bowl, combine the pureed strawberries with the freshly squeezed lemon juice, sugar, and water. Stir well until the sugar is completely dissolved.
  3. Pour the mixture into popsicle molds, leaving a little space at the top as it may expand while freezing. Consider adding small pieces of chopped strawberries for a fun texture.
  4. Place the popsicle sticks into the molds, ensuring they are centered.
  5. Place the molds in the freezer and allow them to freeze for at least 4 to 6 hours, or until completely solid.
  6. Once frozen, gently run warm water over the outside of the molds to ease the popsicles out. Enjoy immediately!

Notes

Store popsicles in the molds or wrap individually in plastic wrap for freshness. Can last 2-3 months in the freezer.
