Preparation
- Preheat your oven to 350°F (175°C) and prepare a 9x13 inch baking pan. Grease it lightly or line it with parchment paper for easy removal.
- In a large mixing bowl, pour in the melted butter and brown sugar. Stir until well combined, until it resembles a smooth mixture.
- Crack in the two eggs, and add the vanilla extract. Whisk these into the butter-sugar mixture until fully blended, giving it a creamy texture.
- Sprinkle in the baking powder, salt, and flour. Gently fold the dry ingredients into the wet mixture until just combined. Be careful not to overmix; it's okay if a few flour streaks remain.
- Delicately stir in the chopped strawberries, lemon zest, and lemon juice.
- Pour the batter into the prepared baking pan and evenly spread it out. Bake for approximately 25-30 minutes, or until the tops are lightly golden and a toothpick comes out clean.
- Allow the blondies to cool in the pan for about 10 minutes before transferring them to a wire rack. Once fully cooled, slice them into squares and enjoy!
Notes
Consider substituting half of the all-purpose flour with almond flour for a nutty twist. Keep an eye on baking time to avoid crumbly blondies. Ensure butter has cooled before mixing to prevent cooking the eggs.
