Preparation
- Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
- In a medium bowl, combine melted butter and sugar until well blended. Add the egg and vanilla extract, whisking until combined.
- In a separate bowl, whisk together flour, baking powder, salt, and lemon zest. Gradually fold this mixture into the wet ingredients until just combined.
- Gently fold in chopped strawberries.
- Pour the batter into the prepared baking pan.
Baking
- Bake in the oven for 25-30 minutes, or until the top is golden and a toothpick comes out clean.
- Let the blondies cool in the pan for about 10 minutes, then lift them out using the parchment paper and cool completely on a wire rack.
- Cut into squares to serve.
Notes
Store in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze for 2-3 months. Reheat in the microwave for 10-15 seconds before serving.
