  • 1 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract

Preparation
  1. Preheat the oven to 350°F (175°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, combine melted butter and sugar until well blended. Add the egg and vanilla extract, whisking until combined.
  3. In a separate bowl, whisk together flour, baking powder, salt, and lemon zest. Gradually fold this mixture into the wet ingredients until just combined.
  4. Gently fold in chopped strawberries.
  5. Pour the batter into the prepared baking pan.
Baking
  1. Bake in the oven for 25-30 minutes, or until the top is golden and a toothpick comes out clean.
  2. Let the blondies cool in the pan for about 10 minutes, then lift them out using the parchment paper and cool completely on a wire rack.
  3. Cut into squares to serve.

Notes

Store in an airtight container at room temperature for up to 3 days, refrigerate for up to a week, or freeze for 2-3 months. Reheat in the microwave for 10-15 seconds before serving.
