Ingredients
  

For the Ice Cream Filling
  • 2 cups strawberry ice cream Allow to soften slightly before mixing.
  • 1 cup sliced strawberries Fresh strawberries for best flavor.
For the Cookies
  • 1 cup sandwich cookies Can use chocolate or vanilla cookies.
Optional Toppings
  • whipped cream Optional for serving.

Method
 

Preparation
  1. Crush the sandwich cookies into smaller pieces to create crumbs.
  2. Allow the strawberry ice cream to soften for a few minutes at room temperature.
  3. Scoop 1 cup of softened strawberry ice cream into a large bowl.
  4. Gently fold the sliced strawberries into the ice cream.
Assembly
  1. Take one sandwich cookie, and add a generous scoop of the strawberry ice cream mixture on top.
  2. Add another cookie on top and gently press down.
Freezing
  1. Place sandwiches on a parchment-lined baking sheet and freeze for at least 1-2 hours.
Serving
  1. Remove from freezer and serve with optional whipped cream or additional sliced strawberries.

Notes

Wrap individual sandwiches in plastic wrap or foil and store in an airtight container for up to two weeks. Let them sit for a minute after removing from the freezer to enhance flavors.
