Preparation
- Start by crushing your golden Oreo cookies into fine crumbs using a food processor or by smashing them in a zippered bag with a rolling pin.
- Mix the crumbs with the melted butter until fully combined.
- Press the cookie mixture into the bottom of a 9x13 inch dish to form an even crust layer.
- In a mixing bowl, beat the softened cream cheese with an electric mixer until creamy and smooth.
- Gradually add in the powdered sugar and vanilla extract, mixing well.
- Gently fold in the whipped cream into the cream cheese mixture until it’s smooth and fluffy.
- Pour the cheesecake filling over the crust, spreading it evenly.
- In another bowl, whisk together the strawberry pudding mix and milk. Let it sit for about 2 minutes to thicken.
- Once thick, pour the pudding mixture over the cheesecake layer and arrange the sliced strawberries on top.
- Refrigerate for at least 4 hours, or overnight, to let the layers set.
Notes
For optimal freshness, store unassembled and add the strawberry layer just before serving. If substituting golden Oreos, consider using graham crackers or any preferred biscuit. Be careful not to overmix the cream cheese and whipped cream to maintain a light texture.
