  • 1 cup almond milk Can substitute with coconut milk for a tropical twist.
  • 3 tablespoons chia seeds These will thicken the pudding.
  • 1 tablespoon maple syrup Adjust sweetness to taste.
  • 1/4 cup cream cheese Make sure it is softened for easy mixing.
  • 1/2 teaspoon vanilla extract For enhanced flavor.
  • 1/2 cup strawberries, pureed Fresh or frozen strawberries can be used.
For the toppings
  • to taste Fresh strawberries Sliced for serving.
  • to taste Graham cracker crumbs For that classic cheesecake flavor.

Preparation
  1. In a mixing bowl, combine the almond milk, chia seeds, maple syrup, cream cheese, and vanilla extract. Use a whisk or a hand mixer until thoroughly blended with no lumps of cream cheese.
  2. Add the strawberry puree to the mixture and stir well until combined.
  3. Transfer the mixture into a mason jar or any airtight container, cover it with a lid, and refrigerate for at least 4 hours, or preferably overnight.
Serving
  1. Just before serving, top the pudding with fresh strawberry slices and a sprinkle of graham cracker crumbs.

Notes

For best results, make the pudding a day in advance. The longer it sits, the better the flavors meld together. Store in an airtight container for up to 5 days.
