- In a mixing bowl, combine the almond milk, chia seeds, maple syrup, cream cheese, and vanilla extract. Use a whisk or a hand mixer until thoroughly blended with no lumps of cream cheese.
- Add the strawberry puree to the mixture and stir well until combined.
- Transfer the mixture into a mason jar or any airtight container, cover it with a lid, and refrigerate for at least 4 hours, or preferably overnight.
Serving
- Just before serving, top the pudding with fresh strawberry slices and a sprinkle of graham cracker crumbs.
Notes
For best results, make the pudding a day in advance. The longer it sits, the better the flavors meld together. Store in an airtight container for up to 5 days.
