Method
Preparation of the crust
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the gra cracker cbs, granulated sugar, and melted butter. Mix until well combined.
- Press this mixture into the bottom of a 9-inch springform pan to form a crust layer.
- Bake for 8-10 minutes or until golden brown. Remove and let cool.
Preparation of the filling
- In a large bowl, beat the softened cream cheese with an electric mixer until smooth.
- Gradually add the granulated sugar and continue to mix until well blended.
- Add in the eggs one at a time, followed by the vanilla extract and sour cream. Mix until creamy and smooth.
Combining ingredients
- Pour the cream cheese mixture over the cooled gra cracker crust and smooth out the top with a spatula.
Baking
- Place the springform pan in the preheated oven and bake for 50-60 minutes, or until the edges are set and the center has a slight jiggle.
Cooling
- Once baked, turn off the oven and let the cheesecake cool inside for about an hour.
- Then remove it and chill in the fridge for at least 4 hours or overnight.
Preparing the topping
- In a small bowl, combine the sliced strawberries, sugar, and lemon juice. Mix gently and set aside for about 15 minutes to release their juices.
Serving
- Once the cheesecake is chilled, slice and top with the fresh strawberries. Enjoy your delightful creation!
