  • 1 cup granulated sugar
  • 0.5 cups unsalted butter, softened
  • 2 large eggs
  • 0.5 cups milk
  • 1 teaspoon baking powder
  • 0.5 teaspoon baking soda
  • 0.25 teaspoon salt
  • 1 teaspoon vanilla extract
  • 1 cup fresh strawberries, hulled and sliced

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a round cake pan.
  2. In a bowl, whisk together the flour, baking powder, baking soda, and salt. Set this aside.
  3. In a large mixing bowl, cream together the softened butter and granulated sugar until light and fluffy, about 3-5 minutes.
  4. Beat in the eggs, one at a time, then add the vanilla extract, mixing well until fully combined.
Baking
  1. Gradually add the flour mixture to the butter mixture, alternating with the milk, starting and ending with the flour mixture. Mix until just combined.
  2. Gently fold in the sliced strawberries, being careful not to break them apart.
  3. Pour the batter into the prepared cake pan and smooth the top. Bake for 25-30 minutes or until a toothpick inserted in the center comes out clean.
  4. Allow the cake to cool in the pan for about 10 minutes before transferring it to a wire rack to cool completely.
  5. Enjoy the cake plain or with your favorite toppings!

Notes

Use fresh strawberries for the best flavor. If using frozen strawberries, the texture may vary. Ensure the cake is completely cool before frosting.
