Preparation
- Preheat your oven to 350°F (175°C).
- In a mixing bowl, mash the ripe bananas until smooth. Stir in the melted butter until well combined.
- Mix in the sugar, egg, and vanilla extract, stirring until the mixture is creamy.
- In another bowl, whisk together the flour, baking soda, and salt.
- Gradually add the dry mixture to the wet ingredients, being careful not to over-mix.
- Gently fold in the chopped strawberries.
- Pour the batter into a greased loaf pan, smoothing the top with a spatula.
Baking
- Place in the preheated oven and bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
- Allow to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.

Notes
Store the bread at room temperature for up to 3 days, or refrigerate for up to one week. For longer storage, freeze slices wrapped in parchment paper for up to three months. Reheat in the oven at 350°F for 10 minutes.
