  • 2 pieces ripe bananas The riper the bananas, the sweeter the bread.
  • 1 cup strawberries, chopped Fresh strawberries are recommended; can substitute with frozen or blueberries.
  • 1/3 cup melted butter
  • 1 cup sugar
  • 1 piece egg
  • 1 teaspoon vanilla extract
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 1/2 cups all-purpose flour

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, mash the ripe bananas until smooth. Stir in the melted butter until well combined.
  3. Mix in the sugar, egg, and vanilla extract, stirring until the mixture is creamy.
  4. In another bowl, whisk together the flour, baking soda, and salt.
  5. Gradually add the dry mixture to the wet ingredients, being careful not to over-mix.
  6. Gently fold in the chopped strawberries.
  7. Pour the batter into a greased loaf pan, smoothing the top with a spatula.
Baking
  1. Place in the preheated oven and bake for about 60 minutes or until a toothpick inserted in the center comes out clean.
  2. Allow to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
  3. Slice and enjoy your homemade Strawberry Banana Bread with your favorite toppings!

Notes

Store the bread at room temperature for up to 3 days, or refrigerate for up to one week. For longer storage, freeze slices wrapped in parchment paper for up to three months. Reheat in the oven at 350°F for 10 minutes.
