Ingredients
  

Base Ingredients
  • 1 cup aquafaba (liquid from canned chickpeas) Ensure it's from unsalted chickpeas for best results.
  • 1 cup strawberries, pureed Fresh or frozen strawberries will work.
  • 1/4 cup powdered sugar Adjust sweetness to taste.
  • 1 teaspoon vanilla extract Use pure vanilla for the best flavor.
  • 1 tablespoon lemon juice Freshly squeezed lemon juice is recommended.

Method
 

Preparation
  1. Wash the strawberries thoroughly, remove the stems, and blend until smooth. Set aside.
Whipping
  1. In a clean mixing bowl, add the aquafaba and beat on high speed until soft peaks form, about 5-7 minutes.
Mixing
  1. Gradually sift in the powdered sugar, vanilla extract, and lemon juice while gently continuing to beat until firm peaks form.
  2. Carefully fold the strawberry puree into the whipped aquafaba with a rubber spatula, being gentle to maintain airiness.
Chill and Serve
  1. Spoon the mixture into serving dishes and let it chill in the refrigerator for at least an hour before serving.

Notes

Store in the refrigerator for up to 3 days. Best served fresh but can be frozen in an airtight container for a month. Thaw in the fridge overnight for best results.
