Mixing
- Gradually sift in the powdered sugar, vanilla extract, and lemon juice while gently continuing to beat until firm peaks form.
- Carefully fold the strawberry puree into the whipped aquafaba with a rubber spatula, being gentle to maintain airiness.
Chill and Serve
- Spoon the mixture into serving dishes and let it chill in the refrigerator for at least an hour before serving.
Notes
Store in the refrigerator for up to 3 days. Best served fresh but can be frozen in an airtight container for a month. Thaw in the fridge overnight for best results.
