Preparation
- In a bowl, mix together the apricot preserves, soy sauce, minced garlic, Dijon mustard, olive oil, salt, and pepper.
- Add the chicken thighs and toss well to coat. Let this marinate for at least 15 minutes.
Cooking
- Preheat your oven to 400°F (200°C) or use a stovetop pan for cooking.
- Optionally, sear the chicken thighs in a hot skillet for 3-4 minutes on each side until browned.
- Transfer chicken to a baking dish (if seared) and pour the remaining marinade over the top. Bake for 20 minutes or until the internal temperature reaches 165°F (74°C).
Serving
- Remove chicken from the oven, let it rest for a few minutes, then garnish with chopped green onions and serve.
Notes
Store leftovers in an airtight container for 3-4 days in the refrigerator. For freezing, use a freezer-safe container or bag for up to 3 months. Reheat in the oven at 350°F (175°C) for about 20 minutes.
