  • 4 pieces chicken thighs
  • 1/2 cup apricot preserves Can substitute with peach or mango preserves.
  • 1/4 cup soy sauce
  • 2 cloves garlic, minced
  • 1 tablespoon Dijon mustard
  • 1 tablespoon olive oil
  • to taste Salt
  • to taste Pepper
For Garnishing
  • as needed Chopped green onions For garnish

Method
 

Preparation
  1. In a bowl, mix together the apricot preserves, soy sauce, minced garlic, Dijon mustard, olive oil, salt, and pepper.
  2. Add the chicken thighs and toss well to coat. Let this marinate for at least 15 minutes.
Cooking
  1. Preheat your oven to 400°F (200°C) or use a stovetop pan for cooking.
  2. Optionally, sear the chicken thighs in a hot skillet for 3-4 minutes on each side until browned.
  3. Transfer chicken to a baking dish (if seared) and pour the remaining marinade over the top. Bake for 20 minutes or until the internal temperature reaches 165°F (74°C).
Serving
  1. Remove chicken from the oven, let it rest for a few minutes, then garnish with chopped green onions and serve.

Notes

Store leftovers in an airtight container for 3-4 days in the refrigerator. For freezing, use a freezer-safe container or bag for up to 3 months. Reheat in the oven at 350°F (175°C) for about 20 minutes.
