  • 2 3/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened Ensure butter is at room temperature.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar, packed
  • 1 teaspoon vanilla extract
  • 2 large eggs

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
  4. Add in eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until combined.
  5. Gradually mix the flour mixture into the wet ingredients until just combined, being careful not to overmix.
  6. Gently fold in the rainbow sprinkles until evenly distributed throughout the dough.
  7. Using a cookie scoop or tablespoon, drop dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
  1. Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
  2. Allow cooling on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Notes

Store in an airtight container at room temperature for up to a week or freeze for up to three months. To reheat, microwave for a few seconds or bake at 350°F until warmed through.
