Preparation
- Preheat your oven to 350°F (175°C).
- In a bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
- In a large mixing bowl, beat the softened butter, granulated sugar, and brown sugar until light and fluffy, about 2-3 minutes.
- Add in eggs, one at a time, mixing well after each addition. Stir in the vanilla extract until combined.
- Gradually mix the flour mixture into the wet ingredients until just combined, being careful not to overmix.
- Gently fold in the rainbow sprinkles until evenly distributed throughout the dough.
- Using a cookie scoop or tablespoon, drop dough onto a baking sheet lined with parchment paper, spacing them about 2 inches apart.
Baking
- Bake in the preheated oven for 10-12 minutes or until the edges are lightly golden.
- Allow cooling on the baking sheet for about 5 minutes before transferring to a wire rack to cool completely.

Store in an airtight container at room temperature for up to a week or freeze for up to three months. To reheat, microwave for a few seconds or bake at 350°F until warmed through.
