Ingredients
  

Dry Ingredients
  • 2 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
Wet Ingredients
  • 1 cup unsalted butter, softened
  • 3/4 cup granulated sugar
  • 3/4 cup packed brown sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
Mix-ins
  • 1 to 2 cups spring-themed M&M's or chocolate chips
  • optional frosting for decoration

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
  2. In a bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
  3. In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until fluffy.
  4. Beat in the eggs and vanilla extract until well combined.
  5. Gradually add the dry mixture to the wet mixture, mixing just until combined. Be careful not to overmix!
  6. Gently fold in the spring-themed M&M's or chocolate chips, ensuring they are evenly distributed.
Baking
  1. Pour the batter into the prepared cake pan and smooth the top.
  2. Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
Cooling and Serving
  1. Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
  2. If desired, decorate with frosting before slicing and serving.

Notes

For a chewier cookie cake, decrease the baking time slightly. Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. It can also be frozen for up to 3 months.
