Preparation
- Preheat your oven to 350°F (175°C) and grease a 9-inch round cake pan or line it with parchment paper.
- In a bowl, whisk together the all-purpose flour, baking soda, and salt. Set aside.
- In a large mixing bowl, cream the softened butter, granulated sugar, and brown sugar together until fluffy.
- Beat in the eggs and vanilla extract until well combined.
- Gradually add the dry mixture to the wet mixture, mixing just until combined. Be careful not to overmix!
- Gently fold in the spring-themed M&M's or chocolate chips, ensuring they are evenly distributed.
Baking
- Pour the batter into the prepared cake pan and smooth the top.
- Bake for 20-25 minutes, or until the edges are golden brown and a toothpick inserted in the center comes out clean.
Cooling and Serving
- Allow the cake to cool in the pan for about 10 minutes, then transfer it to a wire rack to cool completely.
- If desired, decorate with frosting before slicing and serving.
Notes
For a chewier cookie cake, decrease the baking time slightly. Store leftovers in an airtight container at room temperature for up to 3 days, or refrigerate for up to a week. It can also be frozen for up to 3 months.
