Ingredients
  

For the Filling
  • 2 cups fresh spinach, chopped
  • 1 cup cream cheese, softened Can substitute with ricotta or cottage cheese.
  • 1/2 cup shredded cheese (like mozzarella or cheddar) Use any Halal-friendly cheese of your choice.
  • 1/4 cup onion, finely chopped
  • 1 package puff pastry sheets
  • to taste Salt
  • to taste Pepper
  • 1 egg for egg wash

Method
 

Preparation
  1. Preheat your oven to 400°F (200°C).
  2. In a bowl, combine chopped spinach, softened cream cheese, shredded cheese, and finely chopped onion. Mix well, and season with salt and pepper to taste.
  3. On a lightly floured surface, roll out puff pastry sheets and cut them into squares or circles, aiming for about 3 inches in diameter.
Assembly
  1. Place a tablespoon of the spinach and cheese mixture in the center of each pastry piece.
  2. Fold the pastry over to create a pocket and seal the edges by pressing with a fork or your fingers.
Baking
  1. Beat the egg in a small bowl and brush a thin layer over the tops of the puffs.
  2. Place the filled puffs on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
  3. Allow to cool for a few minutes before serving. Enjoy warm!

Notes

Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to a month. Reheat in an oven preheated to 375°F (190°C) for about 10-15 minutes.
