Preparation
- Preheat your oven to 400°F (200°C).
- In a bowl, combine chopped spinach, softened cream cheese, shredded cheese, and finely chopped onion. Mix well, and season with salt and pepper to taste.
- On a lightly floured surface, roll out puff pastry sheets and cut them into squares or circles, aiming for about 3 inches in diameter.
Assembly
- Place a tablespoon of the spinach and cheese mixture in the center of each pastry piece.
- Fold the pastry over to create a pocket and seal the edges by pressing with a fork or your fingers.
Baking
- Beat the egg in a small bowl and brush a thin layer over the tops of the puffs.
- Place the filled puffs on a baking sheet lined with parchment paper and bake for 15-20 minutes, or until golden brown.
- Allow to cool for a few minutes before serving. Enjoy warm!
Notes
Store leftovers in an airtight container for up to 3 days in the refrigerator or freeze for up to a month. Reheat in an oven preheated to 375°F (190°C) for about 10-15 minutes.
