Method
 

Cooking the Noodles
  1. Boil a pot of water and cook the rice noodles according to the package instructions, typically around 4-6 minutes. Drain and set aside.
Sautéing the Vegetables
  1. In a large skillet or wok, heat the vegetable oil over medium heat until shimmering.
  2. Add the sliced red bell pepper and broccoli florets, sautéing for about 3-4 minutes until vibrant and slightly tender.
  3. Stir in the minced garlic and cook for an additional minute.
Combining Ingredients
  1. Add the cooked rice noodles to the skillet, followed by the soy sauce, fish sauce, and chili paste. Mix well to ensure the noodles are coated.
  2. Stir in the chopped green onions for added flavor. Adjust seasoning if necessary.
Serving
  1. Plate the noodles and garnish with fresh cilantro.

Notes
