  • 1 whole avocado, sliced
  • 1 whole jalapeño, sliced
  • 1 whole red bell pepper, roasted and sliced
  • 2 whole eggs
  • Salt and pepper to taste
  • Olive oil (for frying)

Method
 

Preparation
  1. Begin by prepping your avocado, jalapeño, and roasted bell pepper. If you don’t have roasted red peppers, you can easily roast your own over the stovetop or in the oven until tender and slightly charred.
Cooking
  1. Heat a non-stick frying pan over medium heat and add a drizzle of olive oil.
  2. Crack the eggs into the pan, season with salt and pepper, and cook until the whites are set and the yolks are cooked to your preference (sunny-side up or over-easy).
  3. While the eggs are cooking, toast your bread slices until they are golden brown and crispy.
Assembly
  1. On one slice of toasted bread, layer the sliced avocado, followed by the roasted bell pepper, jalapeño, and finally, the fried eggs.
  2. Add another slice of bread on top, and if desired, sprinkle with your favorite hot sauce or cheese.
Serving
  1. Cut the sandwich in half and serve warm.

Notes

Consider customizing by swapping out jalapeños for milder peppers and adding cheese for additional flavor. Store leftovers in an airtight container in the fridge for up to 2 days. Reheat in a toaster oven or skillet for best results, avoiding a microwave to preserve texture.
