Ingredients
  

Rice Base
  • 1 cup sushi rice
  • 1.25 cups water
Salmon Mixture
  • 8 oz sushi-grade salmon, diced Be sure to use sushi-grade salmon to ensure safety and flavor.
  • 2 tablespoons sriracha sauce
  • 1 tablespoon mayonnaise
Toppings
  • 1 whole avocado, sliced
  • 2 pieces green onions, sliced
  • to taste soy sauce, for serving
  • to taste sesame seeds, for garnish
  • 2 sheets nori sheets, cut into strips

Method
 

Cook the Rice
  1. Rinse the sushi rice under cold water until the water runs clear.
  2. In a medium saucepan, combine the rinsed rice and water. Bring it to a boil, cover, and reduce the heat to low.
  3. Let it simmer for about 18-20 minutes until all the water is absorbed.
  4. Remove from heat and let it sit for 10 minutes, covered, to finish steaming.
Prepare the Salmon Mixture
  1. In a bowl, mix the diced salmon with sriracha and mayonnaise until well combined.
Crisp the Rice
  1. In a large non-stick skillet, heat a small splash of oil over medium-high heat.
  2. Once hot, spread the cooked sushi rice evenly across the skillet, pressing it down to form a compact layer.
  3. Cook for about 5-7 minutes, or until the bottom is golden and crispy.
Top with Salmon
  1. Once the rice is crispy, carefully flip it (you might need to cut it into quarters to do this easily) and let it crisp on the other side for another 3-5 minutes.
  2. When crispy, take the skillet off the heat and top the rice with the salmon mixture, avocado slices, and green onions.
Garnish and Serve
  1. Finish with sesame seeds and serve hot, alongside soy sauce for dipping.

Notes

To keep your Spicy Salmon Crispy Rice fresh, store leftovers in an airtight container in the refrigerator for up to 2 days. For reheating, the best method is to use a skillet over low heat to regain crispiness. A microwave works, but may lose the crispy texture.
