Ingredients
  

Noodles and Sauce
  • 8 oz noodles (spaghetti, rice, or any favorite)
  • 1/4 cup peanut butter (smooth or crunchy)
  • 2 tbsp soy sauce
  • 1 tbsp Sriracha Adjust to taste
  • 1 tbsp sesame oil
  • 1 tbsp honey (or maple syrup for a vegan option)
Garnish and Serving
  • 2 green onions, chopped
  • 1/4 cup cilantro, chopped
  • Salt to taste
  • Lime wedges for serving

Method
 

Cooking the Noodles
  1. Start by boiling a pot of salted water. Add the noodles and cook according to package directions until al dente. Drain and set aside, reserving some cooking water.
Preparing the Sauce
  1. In a mixing bowl, whisk together the peanut butter, soy sauce, Sriracha, sesame oil, and honey until you achieve a smooth consistency. If the sauce is too thick, you can mix in a tablespoon or two of the reserved pasta cooking water until it’s the desired texture.
Combining Ingredients
  1. In a large mixing bowl, toss the freshly cooked noodles with the peanut sauce until fully coated. Make sure all the noodles are well-covered.
Adding Freshness
  1. Stir in the chopped green onions and cilantro. Season with salt to taste and give everything one last mix.
Serving
  1. Plate the noodles and serve with a wedge of lime for a zesty finish.

Notes

Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat gently, adding a splash of water or broth to loosen the sauce.
