Method
Cooking the Noodles
- Start by boiling a pot of salted water. Add the noodles and cook according to package directions until al dente. Drain and set aside, reserving some cooking water.
Preparing the Sauce
- In a mixing bowl, whisk together the peanut butter, soy sauce, Sriracha, sesame oil, and honey until you achieve a smooth consistency. If the sauce is too thick, you can mix in a tablespoon or two of the reserved pasta cooking water until it’s the desired texture.
Combining Ingredients
- In a large mixing bowl, toss the freshly cooked noodles with the peanut sauce until fully coated. Make sure all the noodles are well-covered.
Adding Freshness
- Stir in the chopped green onions and cilantro. Season with salt to taste and give everything one last mix.
Serving
- Plate the noodles and serve with a wedge of lime for a zesty finish.
Notes
Store leftovers in an airtight container in the refrigerator for up to 4 days, or freeze for up to 3 months. Reheat gently, adding a splash of water or broth to loosen the sauce.
