  • 2 cups mixed vegetables (bell peppers, broccoli, carrots, etc.)
  • 4 cloves garlic, minced
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1 teaspoon red pepper flakes
  • Salt and pepper to taste
  • Cooked rice or noodles for serving

Preparation
  1. Start by preparing all your ingredients. Chop your mixed vegetables into bite-sized pieces.
  2. Mince the garlic until fine, and get everything ready before heating your pan.
Cooking
  1. In a large skillet, over medium heat, add the ground beef and cook until it’s browned, about 5-7 minutes. Use a spatula to break it apart as it cooks.
  2. Once the beef is browned, add the minced garlic and the mixed vegetables. Stir well to combine and cook for another 3-5 minutes until the veggies have softened but remain crunchy.
  3. Pour in the soy sauce, sesame oil, and sprinkle the red pepper flakes. Stir everything together, ensuring that the beef and veggies are well-coated. Season with salt and pepper to taste. Cook for an additional 2 minutes.
  4. Remove from heat and serve your stir-fry over cooked rice or noodles. Feel free to garnish with some sesame seeds or chopped green onions for an extra punch!

Notes

Store leftovers in the refrigerator for up to 3 days or freeze for up to a month. Reheat in the microwave or in a skillet with a splash of water to keep it moist. If using different meat, consider ground chicken or turkey as a lighter alternative.
