  • 200 g noodles (egg or rice noodles) Choose your favorite type.
  • 2 tablespoons gochujang Korean chili paste.
  • 4 cups vegetable broth
  • 1 tablespoon soy sauce
  • 1 teaspoon sesame oil
  • 1 cup bok choy, chopped Can substitute with spinach or kale.
  • 1 medium carrot, sliced
  • 2 stalks green onions, chopped
  • 1 tablespoon ginger, minced
  • 1 clove garlic, minced
Optional Toppings
  • to taste sesame seeds
  • to taste chili flakes

Method
 

Preparation
  1. Cook the noodles according to the package instructions. Drain and set aside.
  2. In a large pot, heat the sesame oil over medium heat. Add the minced garlic and ginger, stirring until fragrant (about 1 minute).
  3. Add the chopped bok choy and sliced carrot, sautéing them for another 3-4 minutes until they begin to soften.
  4. Add in the gochujang, stirring until well blended with the vegetables.
  5. Slowly add the vegetable broth and soy sauce, bringing the mixture to a gentle simmer.
  6. Add your cooked noodles to the broth and let them heat through. Taste and adjust seasoning if needed.
  7. Ladle the Spicy Gochujang Noodle Soup into bowls and sprinkle with green onions, sesame seeds, and chili flakes if desired.
  8. Grab your favorite pair of chopsticks or a spoon, and dive into your homemade bowl of joy!

Notes

Store leftovers in the refrigerator for up to three days or freeze for longer storage. Reheat gently and add a splash of broth or water if needed.
