Dry Ingredients
  • 2 cups all-purpose flour
  • 1 cup sugar can be substituted with honey or maple syrup
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
Wet Ingredients
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 cup diced ripe pears ensure they are ripe but firm
  • 1/2 cup chopped walnuts or pecans optional

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or non-stick cooking spray.
  2. In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix until well combined.
  3. In another bowl, whisk together the melted butter, eggs, and vanilla extract until well blended.
  4. Gradually add the wet ingredients to the dry mixture, stirring just until combined—be careful not to overmix.
  5. Gently fold in the diced ripe pears and, if using, chopped walnuts or pecans.
  6. Using a spoon or ice cream scoop, fill each muffin liner about 3/4 full with batter.
Baking
  1. Place in the preheated oven and bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
  2. Allow your muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.

Notes

Store muffins in an airtight container at room temperature for up to 2-3 days, or refrigerate for up to one week. Freeze muffins by wrapping each tightly in plastic wrap and placing in a resealable freezer bag for up to 3 months. Reheat in the microwave for 15-30 seconds or in a warm oven.
