Preparation
- Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners or non-stick cooking spray.
- In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg. Mix until well combined.
- In another bowl, whisk together the melted butter, eggs, and vanilla extract until well blended.
- Gradually add the wet ingredients to the dry mixture, stirring just until combined—be careful not to overmix.
- Gently fold in the diced ripe pears and, if using, chopped walnuts or pecans.
- Using a spoon or ice cream scoop, fill each muffin liner about 3/4 full with batter.
Baking
- Place in the preheated oven and bake for 20-25 minutes, or until golden brown and a toothpick inserted into the center comes out clean.
- Allow your muffins to cool in the tin for a few minutes before transferring to a wire rack to cool completely.
Notes
Store muffins in an airtight container at room temperature for up to 2-3 days, or refrigerate for up to one week. Freeze muffins by wrapping each tightly in plastic wrap and placing in a resealable freezer bag for up to 3 months. Reheat in the microwave for 15-30 seconds or in a warm oven.
