Method
Cooking the Pasta
- In a large pot, bring water to a boil. Add a pinch of salt, and then the macaroni pasta. Cook according to the package instructions until al dente (usually about 8-10 minutes). Drain and set aside.
Sautéing
- In a large frying pan, heat the oil over medium heat. Add the chopped onions and sauté until they turn golden brown.
- Incorporate the chopped tomatoes and cook for about 5 minutes, or until they soften and begin to break down.
- Stir in the ginger-garlic paste, garam masala, red chili powder, and salt. Cook for an additional 2-3 minutes, allowing the spices to bloom and blend with the tomato mixture.
- Add the mixed vegetables to the pan, cooking until they're just tender, about 3 minutes.
Combining
- Gently fold in the cooked macaroni to the pan. Mix well so all the pasta is coated in the rich, spiced sauce. Cook for another 2 minutes to let all flavors meld together.
- Sprinkle with fresh cilantro, serve hot, and enjoy the delightful combination of flavors!
Notes
