Ingredients

Pasta and Eggs
  • 8 ounces pasta (penne or rotini)
  • 4 pieces hard-boiled eggs, chopped
Dressing
  • 1/2 cup mayonnaise
  • 1 tablespoon Dijon mustard
  • 1 teaspoon paprika
  • 1/2 teaspoon garlic powder
  • to taste Salt and pepper
Toppings
  • 1/4 cup chopped green onions
  • 1/4 cup chopped celery

Method

Preparation
  1. Start by bringing a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente (typically 8-10 minutes). Drain the pasta and let it cool slightly.
  2. While the pasta cooks, prepare your hard-boiled eggs. If you don’t have any pre-cooked, place eggs in a pot, cover them with water, bring to a boil, then cover and let them sit for about 12 minutes before cooling them in ice water and peeling.
Mixing
  1. In a large mixing bowl, combine the mayonnaise, Dijon mustard, paprika, garlic powder, salt, and pepper. Stir until everything is well-mixed.
  2. Add the cooled pasta, chopped eggs, green onions, and celery to the bowl. Gently fold everything together until coated in the dressing.
Chill and Serve
  1. Let the salad chill in the refrigerator for at least 30 minutes to allow the flavors to meld together.
  2. Serve chilled and enjoy this delightful Spiced Egg Pasta Salad as a comforting side dish or main star!

Notes

Feel free to swap out the noodles for gluten-free pasta or use Greek yogurt instead of mayonnaise for a lighter option. Allow your pasta to cool completely before mixing with the dressing to prevent it from becoming soggy. Don’t overcook the pasta as al dente holds up better in salads.
