Ingredients
  

For the Cookie Dough
  • 1 cup cream cheese, softened Make sure it's at room temperature for optimal mixing.
  • 1/2 cup unsalted butter, softened Also at room temperature.
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour Can substitute with whole wheat flour for a healthier option.
  • 1 teaspoon baking powder
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon salt

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the cream cheese, unsalted butter, granulated sugar, and brown sugar. Cream until light and fluffy.
  3. Add in the egg and vanilla extract and beat until well combined.
  4. In another bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt.
  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
  6. Drop rounded tablespoons of dough onto ungreased baking sheets, leaving space between each cookie.
Baking
  1. Bake for 10-12 minutes, or until the edges are lightly browned.
  2. Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.

Notes

Store cookies in an airtight container at room temperature for up to a week. These cookies freeze well for up to 3 months. Reheat in the microwave or a preheated oven for best taste and texture.
