Preparation
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the cream cheese, unsalted butter, granulated sugar, and brown sugar. Cream until light and fluffy.
- Add in the egg and vanilla extract and beat until well combined.
- In another bowl, whisk together the all-purpose flour, baking powder, ground cinnamon, ground nutmeg, ground ginger, and salt.
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined.
- Drop rounded tablespoons of dough onto ungreased baking sheets, leaving space between each cookie.
Baking
- Bake for 10-12 minutes, or until the edges are lightly browned.
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to wire racks to cool completely.
Notes
Store cookies in an airtight container at room temperature for up to a week. These cookies freeze well for up to 3 months. Reheat in the microwave or a preheated oven for best taste and texture.
