Wet Ingredients
  • 1 cup mashed cantaloupe About one ripe cantaloupe will yield this amount.
  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar Packed brown sugar works best.
  • 1/2 cup vegetable oil
  • 2 large eggs
  • 1 teaspoon vanilla extract
Dry Ingredients
  • 2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
Optional Ingredients
  • 1/2 cup chopped nuts Optional, can be walnuts or pecans.

Method
 

Preparation
  1. Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
  2. In a medium bowl, mash your ripe cantaloupe until smooth to yield about one cup.
  3. In a large bowl, combine the mashed cantaloupe, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk them together until well combined.
  4. In a separate bowl, mix the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
  5. Gradually add the dry mixture to the wet ingredients, stirring gently to avoid over-mixing.
  6. If using chopped nuts, fold them into the batter.
  7. Pour the batter into your prepared loaf pan and smooth the top.
  8. Bake in the oven for about 60 minutes, or until a toothpick inserted comes out clean.
  9. Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.

Notes

For best results, watch closely during the last 10-15 minutes of baking to prevent over-baking. Store leftovers wrapped in plastic wrap or foil for up to 4 days at room temperature or freeze for up to 3 months.
