Preparation
- Preheat your oven to 350°F (175°C) and grease a 9x5-inch loaf pan.
- In a medium bowl, mash your ripe cantaloupe until smooth to yield about one cup.
- In a large bowl, combine the mashed cantaloupe, granulated sugar, brown sugar, vegetable oil, eggs, and vanilla extract. Whisk them together until well combined.
- In a separate bowl, mix the all-purpose flour, baking powder, baking soda, salt, cinnamon, and nutmeg.
- Gradually add the dry mixture to the wet ingredients, stirring gently to avoid over-mixing.
- If using chopped nuts, fold them into the batter.
- Pour the batter into your prepared loaf pan and smooth the top.
- Bake in the oven for about 60 minutes, or until a toothpick inserted comes out clean.
- Let it cool in the pan for about 10 minutes, then transfer to a wire rack to cool completely before slicing.
Notes
For best results, watch closely during the last 10-15 minutes of baking to prevent over-baking. Store leftovers wrapped in plastic wrap or foil for up to 4 days at room temperature or freeze for up to 3 months.
